The Burgundy truffle, tuber uncinatum, is in season from October through January (depending on the weather). This dark truffle is always very welcome as it tides us over until the winter truffle season begins. With its dark brown to tan veined flesh, it's famous for a mild and delicate flavor with hazelnut notes, and a light aroma.
