This wonderful Confit is mixed with the most traditional of French seasonings – herbs de Provence, a blend of the herbs that grow wild in this beautifully region, including thyme, rosemary, marjoram and oregano. This beautifully fragrant mix is the perfect match for this rich and meaty pork liver confit.
This recipe goes back 100 years, but Henaff not only follows traditional techniques and century-old recipe, they also use the finest quality livers for their pate, and more, they use the whole pig, including the succulent ham, which results in a finely flavored and textured spread with a rich, full-bodied flavor.
The recipe was created by Jean Henaff back in 1915, and it hasn’t been changed ever since. The pigs are soured locally from farms in nearby Pouldreuzic, and the pate is aged 6 weeks to fully develop the flavors.
This wonderful spread is perfect just served simply over crackers, toast points, or a simple, rustic baguette…you can almost pretend you’re in France! The aromatic herbs stand on their own, so this confit needs no adornment – just you favorite bottle of red wine.
