Henaff hails from Brittany, France, and they’re our newest addiction! This wonderful piece pate is made from a pate recipe that goes back 100 years, and in that time they’ve really perfected the art of charcuterie. But not only do they follow traditional techniques and this century-old recipe, they also use the finest quality livers for their pate, in this case the whole pig, including the succulent ham, producing a finely flavored and textured spread that has a rich, full-bodied flavor.
The recipe was created by Jean Henaff back in 1915, and it hasn’t been changed ever since. The pigs are soured locally from farms in nearby Pouldreuzic, and the pate is aged 6 weeks to fully develop the flavors.
Spread it on crackers or a classic French baguette (extra points if you warm it up first!) and serve it with cornichons for a traditional charcuterie spread. Perhaps a sprinkle of sea salt and a crack of freshly ground pepper, paired with some baby greens or kale for contrast. A bottle of Burgundy, and you’re set for a delicious evening.
