About Scottish London Cure Smoked Salmon - Hand-Sliced

The London Cure was made famous at the turn of the 20th Century by Britain's oldest salmon curers, H. Forman & Son. It starts with fresh wild Scottish salmon, smoked within 24hs of being caught. The fish is cleaned and trimmed by hand to preserve the beautiful firm flesh, salted with just the barest amount of rock salt, then hung to dry, the traditional method that allows the smoke to penetrate the whole fish. One of H. Forman & Son's many secrets is in the smoking, just the perfect amount of smoke from oak logs from sustainable forests. The London Cure results in a mild smoky flavor that doesn't overpower the naturally delicious and buttery flavor of the wild salmon.
