Serve it as is, cut into slices like sashimi (try it on homemade sushi!) or give it a turn on the pan by lightly pan-searing it, for a mouthwatering main dish. The London Cure was made famous at the turn of the 20th Century by Britain's oldest salmon curers, H. Forman & Son. It starts with fresh wild Scottish salmon, smoked within 24hs of being caught. The fish is cleaned and trimmed by hand to preserve the beautiful firm flesh, salted with just the barest amount of rock salt, then hung to dry, the traditional method that allows the smoke to penetrate the whole fish.
