About Fresh Flash-Frozen Italian Summer Black Truffles The earthy and musky aroma of fresh winter black trufles has been frozen into our new product: frozen fresh truffles. Unlike jarred or canned truffles which undergo a process of sterilization that eliminates the aroma, flash-frozen truffles retain about 40% of their their signature odor, and almost all of their original flavor. Perfect for chefs who want to serve truffles year-round, these summer black truffles were frozen from our summer 2009 season. Thawing tip: for minimum loss of water weight, place in the over at 400F for 5 minutes in the original packaging.
