Originally produced in Graubünden, Switzerland, Bindenfleisch (yes, it's a mouthful, no pun intended) is basically dried beef, a kind of jerky if you will. Dried initially for about 5 weeks, it's cured and salted evenly and then further air dried. Similar in looks to Bresaola, it is eaten in much the same way, as a snack or deli meat.
