Mostarda is a savory preserve made by hand on a small agritourismo farm near Mantova, according to a family recipe. A chutney-like spread, it's slowly heated to reduce the fruit and vegetable mixtures four separate times, a process which takes three days. Just before bottling, a small amount of mustard essence is added to heighten the sharp flavor. No additives or preservatives are used.
