Made exclusively using Grenache grapes, it is aged in oak casks for about eight years to achieve a robust and earthy character with hints of nuts and vanilla. Banyuls gets its name from the coastal town of Banyuls-sur-mer ("Banyuls by the Sea") where the vineyards are located. In the same category of a fine Italian Balsamico or a Spanish Sherry Vinegar, this is the French contender for vinegar champion. The sweet and tawny flavor lends itself for delicious marinades, deglazing, and vinaigrettes.
