Wine And Foie Gras The quest to find the perfect marriage of foie gras and
wine is endless; connoisseurs and amateurs alike will give

directions. The best advice I ever got from a fellow foie
gras lover was this: Ignore all formulas. Buy a few different
types of wines that you like and love, and sit down with a
good dish of foie gras to find out which one works best for
you.

The Classic
Foie gras and Sauternes. This is Sommelier
101. This combination is great for Foie Gras dishes high
in acidity (say foie gras and fruit) which are balanced
perfectly by the sweetness of this wine. When in doubt,
go for this classic pairing.
The Alternative
Foie Gras and Chardonnay. For seared
or other rich foie gras dishes, pair with a Chardonnay.
The Utterly Luxurious
Foie Gras and Champagne. You really
can't go wrong with it, especially for a meal that features
foie gras as an entrée rather than an appetizer.
