This Canadian duck liver is carefully processed and flash-frozen only two hours from slaughter to preserve the wonderful texture, flavor, fat content and appearance. This grade B foie gras from Canada is slightly darker than Grade A, and slightly more veined. Whole lobe is ready to braise, grill or prepare into a supple mousse. We recommend for searing, which will reduce any appearance of veins. Use as fresh. Once thawed, use within 2 days. Do not refreeze.
