Most definitely one of our most interesting cheeses, Ubriaco is an unpasteurized cow milk cheese that is brushed with wine, in this case, Prosecco, a white grape variety that produces this sparkling white wine - think of it as cheese bathed in champagne! A summery type of cheese due to it's sweetness and mild fruity flavor, it also has the wonderful tanginess and acidity of an aged cheese (over 6 months), creating a complex but simply delicious cheese well suited for the hot summer months.
