About Rustico with Red Pepper

A relative newcomer (keeping in mind cheeses have been around for centuries), Rustico is a Pecorino-style cheese made in the countryside outside of Rome. Made of sheep's milk the short aging of this cheese keeps the flavor character mild and smooth, which contrasts nicely with the piquant red peppercorns. It melts quite nicely and lends itself to polentas, pizzas and Panini.

Ingredients: Pasteurized sheep milk, salt, red peppercorns
