This newcomer - it was only created in 1997, a baby by French cheese standards - has had an astonishing warm reaction in the market. Similar in flavor to Spanish Manchego, but with a milder flavor, it's fabulous to add to a cheese board. In a small round wheel, made of sheep's milk and aged for two months. A subtle cheese perfect for all palates.
