Montasio was created over three centuries ago, so the story goes, the creation of an Alpine monk with a herd of cows to his care. Regardless of it's origin, what nobody can dispute is that delicious Montasio is the result of a combination of wonderful factors: the sweet pastures of the area, the fresh Alpine air, the dedication of the producers and the general excellence of Italian cheese-making. You'll find Montasio to be a great companion on a cheese board: sweet and fresh when young, nutty and firm when aged. It melts quite well, so substitute it for the usual Parmigiano on pastas and au gratins.
