Mahón is a fruity cow's milk cheese that produced in the Spanish island of Minorca (Mahon is named for the town it's produced in) where the weather is temperate year round and perfect for cheese production. This cheese is complex: smooth but with a sharpness to it that contrasts excellently with a creamy texture and nutty aftertaste. Slice and serve, or melt.
