About Langres Chalancey This is a popular while rare cheese, hailing from the same town - Langres in the province of Champagne, France - that brought the literary world the great pen of Diderot. Sometimes compared to Epoisses, this is much subtler cheese and much more complex. It is sweet and flavorful, with a potent smell. A soft, creamy texture and an aftertaste some have described as soaked in honey and truffles. The dent at the top is due to the tradition of filling up this basin with Champagne prior to eating Langres. Why not? Live it up! Wine Alert! Full bodied Burgundy or a Rhone Red with French prunes (if you can find it!)
