This is member of the Brie family of cheeses. This cheese shares a lot of the characteristics of Brie, but it's also salty. Farmers in the Ile-de-France use to make this for their own personal use until it became available to the public in the beginning of the 20th century. Traditionally, the cheese is served with a fern leaf draped across the top of it, giving a delicious flavor to it. This cheese matures for a month before it is ready for sale.
