An absolutely wonderful goats milk cheese from France, Caprifeuille is young and mild. Aged about ten days, old enough to endow it with the slight acid taste, but young enough to be subtle. It is covered with a dusty white, chalky rind, a product of the extended aging period. The granulose rind of Caprifeuille is perfectly edible (we find it deliciously mild), but easily removable with a sharp knife for those who prefer it that way. The stark white inside is a gracious surprise: delicate and smooth. It is attractively wrapped in a flexible enclosure, shaped like a log (or buche).
