This cows milk mountain cheese from the Provence region of France is made in both small and industrial farms. It contains 45% of fat content, which makes it creamy and very unctuous. You'll recognize it for its very particular wrapping, as it comes wrapped in chestnut leaves - its no surprise it has such a nutty flavor. It is allowed to mature for 2 weeks before it is packaged and sent to market.
